Warm Chicken SaladIngredients1 bunch of spinach leaves 10-12 mushrooms 1 tspn of honey 1 tspn lemon juice 1 tspn vinegar 200 gm chicken fillets salt, black pepper (to taste) Method1. Wash spinach and mushrooms, chop them 2. In a microwave safe bowl add chopped spinach and mushrooms. Microwave at 3-4 mins while covered and keep aside. Alternatively mushroom and spinach can be boiled in a small pan and strained. 3. in another microwave safe bowl, microwave (covered) shredded chicken at 100% power for 5-6 mins. Allow to stand 2-3 mins.Alternatively boil a peice of chicken breast and cut into long peices. 4. Mix all ingredients and toss together. Warm it in microwave at 60% power for 2-3 mins before serving. Serve hot.Alternatively mix freshly prepared ingredients (they would still be warm) and serve. Serves 3-4 persons 95 Kcals per serving
