PaneerPreparation time: 5 minutes * Cooking time: 10 minutes * Makes 100 grams. Requirements: 1 litre skim milk juice of 1 lemon or 1 cup curds Method: Put the milk to boil. When it starts boiling, remove from the heat and wait for 2 to 3 minutes. Then, add the lemon juice and stir gently till all the milk curdles. Leave covered for some time. Then, pour over a thin muslin cloth and drain out the whey. Cover with a cloth and place a weight on top to drain out the water. * Cut into pieces or crumble as required. Note : Use of curds gives smoother paneer. Health Information : This type of paneer has a lot of proteins with very little fat. It is also rich in Vitamin B12, calcium phosphorous and zinc.
