Baked Brinjal -Tomato appetizersIngredients: Brinjals 2 long Tomatoes: 3 (firm) medium sized Garlic 4-5 cloves Mayonaise lite - 1 tbspn Preparation: 35-40 mins Cooking time: 10-15 mins Method: Cut brinjal into round slices of approx. 1 cm thickness , sprinkle salt liberally and keep aside for about half an hour, drain any water which has leeched out. Scoop from inside OF brinjals, till half the depth while leaving the outer skin intact. Slice tomatoes and cut shape into round peices sized to fit in the space created in the brinjal slices. Fill all the brinjals in the same way with tomato slices,put a little bit of crushed garlic , salt- spread lite mayonaise on top of all this, put all the pieces in a baking tray - keep in a preheated oven for few minutes and a delicious snack or starter is ready.
